Lamb with Raisins and Almonds in Golden Sauce
Ingredients:
500g lamb (or beef), cut into medium cubes
2 onions, finely chopped
2 tbsp butter or oil
1/2 cup raisins
1/2 cup blanched and toasted almonds
1 tsp ground ginger
1/2 tsp ground cinnamon
1 tsp turmeric
1/2 tsp black pepper
1 tsp honey
Salt to taste
Hot water or meat broth
Instructions:
1. Heat the butter or oil in a pot over medium heat.
Add the chopped onions and sauté until they become soft and golden.
2. Add the meat cubes and stir well with the onions until the meat changes color and is lightly seared on the outside.
3. Add the ginger, cinnamon, turmeric, black pepper, and salt, stirring the mixture for a minute to enhance the spice flavors.
4. Pour enough hot water or broth to fully cover the meat.
Cover the pot partially and let it simmer over medium heat until the meat is tender.
5. Once the meat is cooked, add the raisins and honey.
Stir gently and allow the sauce to thicken slightly, becoming glossy.
6. Meanwhile, toast the almonds in a dry pan over low heat until golden and crunchy.
7. When serving, sprinkle the toasted almonds over the top of the dish.

Serve the lamb with raisins and almonds hot, accompanied by Moroccan bread, steamed rice, or couscous.
