Ingredients:
For the crust:
200g crushed biscuits (Digestive or tea biscuits).
100g melted butter.
2 tbsp brown sugar.
For the filling:
300g cream cheese (at room temperature).
200ml heavy cream (whipped).
4 tbsp powdered sugar.
1 tsp vanilla extract.
Juice of half a lemon.
For decoration:
Fresh fruit slices (kiwi, strawberries, blueberries, mango).
1 tbsp apricot jam dissolved in 1 tsp hot water (for glazing).
Mint leaves for garnish.
Preparation:
1. Prepare the crust:
Mix the crushed biscuits with melted butter and brown sugar until the texture resembles wet sand.
Press the mixture into a tart pan or a small round mold to form a firm base.
Refrigerate for 30 minutes to set.
2. Prepare the creamy filling:
In a bowl, beat the cream cheese with powdered sugar, vanilla extract, and lemon juice until smooth.
Gradually fold in the whipped cream, mixing gently until well combined.
Pour the mixture over the crust and spread it evenly.
Return the tart to the fridge for at least 2 hours to set.
3. Decorate:
Arrange the sliced fruits artistically on top of the creamy filling.
Brush the fruits lightly with the apricot jam glaze for a shiny finish.
Garnish with mint leaves.
4. Serve:
Gently remove the tart from the mold and serve it chilled.
Enhancements:
Add a layer of melted dark chocolate between the crust and the filling for a richer flavor.
Use seasonal fresh fruits for added taste and variety.
Sprinkle a pinch of cinnamon or cocoa powder over the fruit for extra flavor.
