Authentic Moroccan Harira: A Hearty and Flavorful Soup Recipe

 Here’s the recipe for Moroccan Harira Soup, one of the most famous Moroccan dishes, especially during Ramadan:


                -Ingredients:

250 grams of meat (beef or lamb), cut into small cubes

1 large onion, finely chopped

1 cup of lentils

1/2 cup of chickpeas (soaked overnight or pre-cooked)

1/4 cup of rice

2 tablespoons of tomato paste

3 ripe tomatoes, peeled and chopped

1/2 cup of fresh cilantro, chopped

1/2 cup of parsley, chopped

1/2 teaspoon of turmeric

1 teaspoon of ground ginger

1/2 teaspoon of black pepper

1/2 teaspoon of ground cinnamon

1 teaspoon of salt (or to taste)

1/4 cup of thin vermicelli noodles (optional)

3 tablespoons of flour dissolved in 1 cup of water

1.5 liters of meat broth or water

2 tablespoons of vegetable oil


              -Instructions:

1. Prepare the Ingredients: In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden.


2. Add the Meat and Spices: Add the meat and stir for about 5 minutes until the color changes. Then, add the turmeric, ginger, black pepper, and cinnamon, stirring well to mix the spices with the meat.


3. Add Tomatoes and Paste: Add the chopped tomatoes and tomato paste, and stir the mixture well. Let it cook for 10 minutes until the tomatoes start to soften.


4. Add Lentils and Chickpeas: Add the lentils and pre-soaked chickpeas, then pour the meat broth or water over the mixture. Bring it to a boil, then reduce the heat and let it simmer for 30-40 minutes until the lentils and meat are cooked.


5. Add Rice and Vermicelli: Once the meat and lentils are tender, add the rice and vermicelli (if using). Let the soup cook for another 10 minutes until the rice is fully cooked.


6. Thicken the Soup: Gradually add the flour mixture (flour dissolved in water) while continuously stirring until the soup thickens.


7. Add Herbs: Finally, add the chopped cilantro and parsley and let the soup simmer for a few more minutes to let the flavors combine.


8. Serve: Serve the Harira hot, accompanied by Moroccan bread or dates on the side.
