 Recipe for Baked Meat with Vegetables in the Oven



       Ingredients

1 kg of meat (preferably shoulder or thigh, cut into medium-sized pieces)

2 large potatoes (sliced or diced as desired)

2 carrots (sliced)

1 large onion (thinly sliced)

1 cup of mashed tomatoes (or fresh tomato juice)

2 garlic cloves (finely minced)

2 tablespoons olive oil

½ cup of water or chicken broth

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon paprika

½ teaspoon cumin

½ teaspoon cinnamon (optional)

A pinch of thyme or rosemary for garnish



Preparation Method


      1. Marinate the Meat:

In a large bowl, place the meat pieces and add salt, black pepper, paprika, cumin, and cinnamon (if using).


Add one tablespoon of olive oil and mix well to coat the meat thoroughly. Let it sit for 30 minutes to absorb the flavors.


     2. Prepare the Baking Dish:

Preheat the oven to 180°C (356°F).

In a baking dish, evenly distribute the potato slices, carrot slices, and onion slices.

Place the marinated meat pieces on top of the vegetables.


      3. Make the Sauce:

In a small bowl, mix the mashed tomatoes with the minced garlic and ½ cup of water or broth.

Add one tablespoon of olive oil and a small pinch of thyme or rosemary for a distinctive flavor.


     4. Cooking:

Pour the sauce over the meat and vegetables in the baking dish.


Cover the dish tightly with aluminum foil to retain the moisture during cooking.


Place the dish in the oven and bake for about 90 minutes.


     5. Browning:

After the cooking time, remove the aluminum foil and increase the oven temperature to 200°C (392°F).


Leave the dish uncovered for 10-15 minutes until the top is golden and the meat and vegetables are lightly browned.


    6. Serving:

Serve the dish hot with white rice or Arabic bread, and garnish with chopped parsley if desired.


     Tips

You can add zucchini or eggplant to the vegetables as desired.

For a richer flavor, marinate the meat overnight in the spices.
