1 teaspoon salt
Warm water (for kneading)
Vegetable oil (for greasing the dough while spreading)
For the Filling:
250 grams ground meat (beef or lamb)
1 large onion, finely chopped
1 green bell pepper, chopped
1 grated carrot
1 grated zucchini (optional)
2 tablespoons chopped parsley
Salt and black pepper to taste
1 teaspoon paprika
1/2 teaspoon turmeric
Olive oil for frying
Preparation Steps
1. Preparing the Dough:
In a large bowl, mix the white flour, wheat flour, and salt.
Gradually add warm water and knead until you have a smooth and elastic dough.
Divide the dough into medium-sized balls, cover, and let them rest for 15-20 minutes.
2. Preparing the Filling:
Heat a little olive oil in a pan over medium heat.
Add the chopped onion and sauté until it softens.
Add the ground meat and cook, stirring until it changes color and cooks through.
Add the green bell pepper, grated carrot, grated zucchini (if using), and parsley.
Season the mixture with salt, black pepper, paprika, and turmeric.
Stir and cook until the vegetables are tender and the filling is slightly dry. Set aside to cool.
3. Shaping and Stuffing the Msemen:
Take one dough ball and spread it out on an oiled surface with your hands until it is thin.
Place some filling in the center of the dough.
Fold the edges over the filling to form a square, pressing gently to seal the edges.
4. Cooking the Msemen:
Heat a flat skillet over medium heat and grease it with a little oil.
Place the stuffed msemen in the skillet and cook until golden on both sides.
Serving
Serve the msemen hot, alongside Moroccan tea or a fresh salad, and enjoy its unique and delicious taste!
