Ingredients:
2 boneless, skinless chicken breasts
4 slices of cheddar or mozzarella cheese
4 slices of bacon (or pastrami)
1 cup crispy breadcrumbs (golden breadcrumbs for extra color)
1/2 cup all-purpose flour
2 eggs, beaten
1 tsp paprika
1/2 tsp garlic powder
Salt and pepper to taste
1 tbsp butter
Oil for frying (or bake for a healthier option)
1 tsp dried herbs (thyme or oregano)
Preparation Method:
1. Prepare the Chicken:
Slice each chicken breast from the side to create a pocket. Be careful not to cut all the way through.
Season the chicken with salt, pepper, paprika, and garlic powder inside and out.
2. Stuffing:
Fill each pocket with 1-2 slices of cheese and 1-2 slices of bacon.
Seal the pocket securely using toothpicks if needed.
3. Coating:
Prepare three plates: one with flour, the second with beaten eggs, and the third with breadcrumbs mixed with dried herbs.
Dredge the stuffed chicken breasts in flour first, then dip them into the eggs, and finally coat them with the breadcrumbs until fully covered.
4. Cooking:
For Frying: Heat oil in a pan over medium heat and add butter for a richer flavor.
Fry the chicken for 3-4 minutes on each side until golden and crispy.
For Baking: Place the chicken on a baking tray lined with parchment paper. Drizzle with olive oil and bake in a preheated oven at 200°C (400°F) for 20-25 minutes.
5. Final Touch:
Once the chicken is cooked, garnish with freshly chopped parsley.
Serve hot with cream sauce or honey mustard sauce for an extra special touch.
