Preparing a traditional dish from the mountains of Ouarzazate, particularly from the Tichka region, known for its majestic mountains, valleys, and the generosity of its people, is more than just cooking; it's a journey through history and culture.

 Tichka is renowned not only for its natural beauty but also for its significant role in global cinema with its famous studios and historical kasbahs.

Recipe: "Traditional Lamb Tagine with Vegetables" from Tichka



          -Ingredients:

1 kg of lamb (or beef if preferred)

2 medium onions, sliced

3 cloves of garlic, crushed

2 carrots, sliced

2 potatoes, diced

2 zucchinis, sliced

1 large tomato, chopped

½ cup olive oil

1 teaspoon ground ginger

½ teaspoon turmeric

½ teaspoon cinnamon

1 teaspoon black pepper

1 teaspoon salt

½ cup water

A handful of chopped cilantro and parsley

A handful of green olives (optional)



               -Preparation:

     1. Marinate the Meat:

In a bowl, mix the meat with half the amount of olive oil, ginger, turmeric, cinnamon, black pepper, and salt. Let it marinate for 30 minutes.


       2. Prepare the Tagine:

In a traditional tagine pot or a deep saucepan, heat the remaining olive oil.

 Add the sliced onions and garlic, sautéing until the onions become translucent.

Add the marinated meat and brown it over low heat until it turns golden.


          3. Add the Vegetables:

Add the carrots, potatoes, zucchini, and tomatoes to the tagine. Stir everything well to blend the flavors.

Pour in ½ cup of water, cover the tagine, and let it simmer on low heat for about an hour, or until the meat is tender and the vegetables absorb the flavors.


         4. Final Touches:

Ten minutes before the end of cooking, add the chopped cilantro and parsley, along with the green olives (if using).

Let the tagine simmer a little longer until the sauce thickens.



          -  Serving:

Serve the lamb tagine hot with traditional Moroccan bread or couscous.

You can also enhance the experience by serving it in a warm atmosphere with Moroccan mint tea.
