Here’s a recipe for a delicious golden-colored basbousa that is loved by both children and adults, and soft enough for the elderly:
-Ingredients:
2 cups fine semolina
1 cup sugar
1 cup yogurt
1/2 cup shredded coconut
1/2 cup melted butter or ghee
1/2 cup milk
1 teaspoon vanilla extract
1 teaspoon baking powder
A pinch of salt
1/2 cup almonds or pistachios (optional for garnish)
-For the syrup:
2 cups sugar
1 cup water
1 tablespoon lemon juice
1 teaspoon orange blossom water or rose water (optional)
-Preparation Method:
1. Preparing the Basbousa:
1. Preheat the oven to 180°C (350°F) and grease a baking tray with some butter or ghee.
2. In a large bowl, mix the semolina, sugar, coconut, baking powder, and a pinch of salt.
3. Add the melted butter and mix well until the semolina absorbs the butter completely.
4. Add the yogurt, milk, and vanilla, and stir until you get a smooth, consistent mixture.
5. Pour the mixture into the prepared tray and spread it evenly. You can garnish with almonds or pistachios as desired.
6. Place the tray in the preheated oven for 30-40 minutes or until the basbousa turns golden brown on top.
2. Preparing the Syrup:
1. While the basbousa is baking, prepare the syrup. Place the sugar and water in a pot over medium heat.
2. Stir until the sugar dissolves completely, then let it boil.
3. Once it boils, add the lemon juice and let the syrup simmer for 7-10 minutes until it thickens slightly.
Turn off the heat and add orange blossom water or rose water if desired.
3. Serving:
1. Once the basbousa is out of the oven, gradually pour the hot syrup over it until it is fully absorbed.
2. Let the basbousa cool down slightly, then cut it into squares or pieces as desired.
-Tip:
If you want to make the basbousa even softer for the elderly, you can add a little more milk or syrup according to your preference.
Say anything 😀
