       Preparing Goat Meat Tagine


           Ingredients:


1 kilogram of goat meat (preferably from mountainous regions where goats graze on natural herbs)

2 chopped onions

3 crushed garlic cloves

1 tablespoon of ginger

1 teaspoon of turmeric

1 teaspoon of saffron

1 teaspoon of black pepper

½ teaspoon of cinnamon

3 tablespoons of olive oil

1 cup of water or meat broth

½ cup of green olives (optional)

A bundle of fresh aromatic herbs (such as thyme and rosemary)

Salt to taste

3 large carrots, cut into large pieces

2 large potatoes, cut into large pieces

         


             Method:

1. Prepare the meat: In a tagine or pot, place the goat meat with the chopped onions, garlic, ginger, turmeric, saffron, black pepper, cinnamon, and olive oil.

 Sauté the ingredients over medium heat for 10 minutes until the meat changes color and releases its juices.

2. Add the herbs: Add aromatic herbs such as thyme and rosemary to the tagine. 

These herbs grow abundantly in the mountainous areas where goats graze and lend the tagine a natural, smoky flavor.




3. Cook the meat: Add water or meat broth to the tagine, cover, and let it cook over low heat for 1.5 to 2 hours, until the meat is fully tender.


4. Add the vegetables: After one hour of cooking the meat, add the carrots and potatoes, allowing them to cook with the meat until they are fully tender and absorb the flavors.


5. Final touches: Before serving, you can garnish the tagine with green olives for an extra salty flavor. 

Serve the tagine hot with traditional Moroccan bread.
