          -Salmon in Golden Broth Recipe

                            -Ingredients:

4 salmon fillets (skin-on or skinless, about 200g each)

2 tablespoons olive oil

1 onion, finely chopped

3 garlic cloves, minced

1 thumb-sized piece of fresh ginger, grated

1 teaspoon ground turmeric

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon smoked paprika

1 can (400ml) coconut milk

2 cups vegetable or chicken broth

1 tablespoon fish sauce (optional)

1 tablespoon soy sauce

Juice of 1 lime

1 tablespoon honey

Salt and pepper to taste

Fresh cilantro (coriander) leaves for garnish

Lemon or lime wedges for serving

             -Instructions:

      1. Prepare the Salmon:

Pat the salmon fillets dry with paper towels and season both sides with a pinch of salt and pepper. Set aside while you prepare the broth.

      2. Cook the Aromatics:

Heat the olive oil in a large skillet or a deep pan over medium heat. Add the chopped onion and sauté until softened and golden, about 5-7 minutes.

Add the garlic and ginger to the pan and sauté for an additional 2-3 minutes, until fragrant.

     3. Spice it Up:

Sprinkle the ground turmeric, cumin, coriander, and smoked paprika over the onion mixture. Stir everything together for 1-2 minutes, allowing the spices to toast and release their aromas.

     4. Make the Broth:

Pour in the coconut milk and broth, stirring to combine. Bring the mixture to a gentle simmer.

Add the fish sauce (if using), soy sauce, lime juice, and honey. Stir everything together and let it simmer for about 10 minutes, allowing the flavors to meld and the broth to turn a rich golden color.

       5. Cook the Salmon:

Gently lower the salmon fillets into the broth, skin-side down if they have skin. Cover the pan and let the salmon poach in the flavorful liquid for 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.

        6. Final Adjustments:

Taste the broth and adjust the seasoning if necessary. You can add more salt, lime juice, or honey depending on your taste preference.

          7. Garnish & Serve:

Carefully remove the salmon fillets from the pan and place them on serving plates. Spoon the golden broth generously over the fish.

Garnish with fresh cilantro leaves and serve with lemon or lime wedges on the side for an extra citrusy kick.

            -Serving Suggestions:

This dish pairs beautifully with fluffy jasmine rice or crusty bread to soak up the delicious broth. For a lighter option, serve it with steamed vegetables or a crisp green salad.

Enjoy the rich and fragrant Salmon in Golden Broth, perfect for a comforting yet sophisticated meal!
