Grilled Steaks with Gold Butter
Ingredients:
- 4 beef steaks (choose your preferred cut, such as ribeye or sirloin)
- 2 tablespoons of extra virgin olive oil
- Sea salt (to taste)
- Freshly ground black pepper (to taste)
- 2 crushed garlic cloves
- 1 teaspoon dried or fresh thyme
- 1 teaspoon chopped rosemary
- 100 grams of unsalted butter
- 1 teaspoon edible gold flakes

Preparing the Gold Butter:
- Before starting with the meat, prepare the gold butter. In a small bowl, place the unsalted butter and leave it at room temperature to soften.
- Once the butter has softened, add the edible gold flakes and gently mix with a wooden spoon until fully combined. Set the mixture in the fridge to firm up.
Preparing the Steaks:
- First, pat the steaks dry with paper towels to remove any excess moisture. This helps achieve a crispy outer layer when grilling.
- Generously season the steaks with sea salt and freshly ground black pepper on both sides.
- In a small bowl, mix the crushed garlic with the thyme, rosemary, and olive oil. Rub the steaks with this mixture, making sure to coat all sides.
Heating the Grill:
- Preheat the grill on high heat. Make sure the grill is very hot before placing the steaks to get those perfect grill marks and a smoky flavor.
- If using a charcoal grill, allow the coals to burn until they are glowing and gray in color. For a gas or electric grill, preheat for at least 10 minutes.
Grilling:
- Place the steaks on the hot grill and let them cook for 3-5 minutes on each side, depending on the thickness of the steaks and the desired doneness.
- For medium-rare, cook the steaks until they reach an internal temperature of 57°C (135°F). For medium, cook until 63°C (145°F).
- Remember to flip the steaks only once during grilling for even cooking.
Adding the Gold Butter:
- Once the steaks are done grilling, allow them to rest for 5-10 minutes. This helps the juices redistribute within the meat, making it more tender.
- While resting, place the gold butter on top of the hot steaks. The butter will melt instantly, adding a rich, luxurious flavor with a stunning golden shimmer.
Serving:
- Arrange the grilled steaks on serving plates and garnish with fresh thyme or rosemary for an extra touch of elegance.
- Serve with roasted vegetables or a side salad of your choice, along with slices of fresh bread.
Additional Tips:
- Be sure not to flip the steaks too frequently during grilling to retain the internal juices.
- For a smokier flavor, you can add small wood chips (such as hickory or cherry) to the charcoal during grilling.
