                             -Ingredients:

              - For the filling:

  • 2 cans of tuna in water (about 200 grams per can)
  • 200 grams of Chinese vermicelli noodles
  • 1 large onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 large carrot, grated
  • 2 tablespoons of chopped green olives
  • 2 tablespoons of chopped parsley
  • 1 teaspoon of cumin
  • ½ teaspoon of black pepper
  • ½ teaspoon of sweet paprika
  • 1 teaspoon of harissa (optional for those who prefer spicy flavors)
  • 2 tablespoons of olive oil
  • Juice of half a lemon
  • Salt to taste


    -For the dough:

  • 1 package of brick pastry (or phyllo dough or samosa sheets)
  • Melted butter for brushing the pastry
  • Vegetable oil for frying

                         -Preparation:

  1. Preparing the Chinese vermicelli:

    • Place the Chinese vermicelli in a large bowl and pour boiling water over them until fully submerged. Let them sit for 5 minutes until they soften.
    • Drain the vermicelli well and use scissors to cut them into smaller pieces suitable for the filling.
  2. Preparing the filling:

    • In a large pan, heat the olive oil and add the chopped onion and garlic. Sauté until the onion becomes golden and soft.
    • Add the grated carrot and continue to stir for 3-4 minutes until the carrot softens.
    • Add the drained tuna, chopped olives, and parsley, mixing all the ingredients well.
    • Add the spices: cumin, black pepper, sweet paprika, and salt. For a spicier taste, add a teaspoon of harissa.
    • Stir in the chopped vermicelli and mix well. Finally, add the lemon juice and continue stirring until all the ingredients are well combined.


  3. Preparing the briouats:

    • Take a sheet of brick pastry and brush it with a little melted butter to make it soft and easy to fold.
    • Place a tablespoon of the filling at one end of the sheet and start folding it into a triangular shape. Make sure to fold the sheet tightly to prevent the filling from spilling out during frying.
    • Repeat the process until all the filling is used.
  4. Frying:

    • Heat enough vegetable oil in a deep pan over medium heat.
    • Fry the briouats in the hot oil until they become golden and crispy on all sides. Make sure to drain them well on paper towels after frying.
