                     Preparation of Mince Pies


                                          Ingredients:     


                   

- 300 grams of flour

- 200 grams of cold butter (cut into cubes)

- 2-3 tablespoons of sugar

- 1 egg (optional)

- Cold water (as needed)


                        For the Mince Filling:

- 200 grams of raisins

- 100 grams of currants

- 100 grams of candied orange and lemon peel

- 1 grated apple

- 100 grams of brown sugar

- 50 ml of orange or lemon juice

- 1 teaspoon of cinnamon

- 1 teaspoon of nutmeg

- 1 teaspoon of cloves

- 50 grams of chopped almonds (optional)

- 50 ml of brandy or apple juice (optional)




                           Preparation Steps:


           Prepare the Mince Filling:


1.  Mix the Ingredients:

   - In a large bowl, combine all the mince filling ingredients, including the raisins, currants, candied peel, grated apple, sugar, spices, and brandy (if used). Mix well until everything is evenly combined.


2.    Maturation:

   - Cover the mince filling and refrigerate it for at least one day (preferably several days) to allow the flavors to meld and become richer.


                       Prepare the Pastry:


1. Make the Dough: 

 - In a large bowl, mix the flour with the sugar. Then add the cold butter and rub it in with your fingertips until the mixture resembles coarse crumbs.

   - Add the egg (optional) and a little cold water to bring the dough together.

   - Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.


2. Assemble the Pies: 

- Preheat the oven to 180°C (350°F).

   - Roll out the dough on a floured surface and cut it into circles using a round cutter.

   - Place the dough circles into tart tins and add a spoonful of mince filling to each.

   - Cover the pies with smaller circles of dough to create lids, pressing the edges to seal.


3.  Baking:

 - Bake the pies for 15-20 minutes until golden brown.

   - Allow the pies to cool slightly before dusting them with powdered sugar and serving.

-  Origin and History: The origin of mince pies dates back to  medieval England . Initially, they were known as "mincemeat pies" and contained actual minced meat along with dried fruits and spices. Over time, these pies evolved into the sweet version we know today, traditionally served during the holiday season, especially Christmas.


- Evolution:  In the  19th century  mince pies began to take their modern form, with meat being omitted and the focus shifting to dried fruits, spices, and a touch of brandy for flavor.


Inventor:  There is no specific individual credited with the invention of mince pies. Instead, they gradually evolved through English culture, transitioning from savory meat pies to the sweet festive treat they are today.
