How to Prepare Sardine Tagine with Tomatoes: A Delicious and Flavorful Recipe
Ingredients:
500 grams of sardines (cleaned and head removed).
3 large tomatoes (grated or finely chopped).
1 small onion (finely chopped).
3 garlic cloves (minced).
1/2 cup of olive oil.
Juice of half a lemon.
2 tablespoons of coriander and parsley (chopped).
1 teaspoon of cumin.
1 teaspoon of paprika.
A small pinch of turmeric.
Salt and black pepper to taste.
1 chili pepper (optional).
Preparation Method:
1. Preparing the Sardines:
Wash the sardines thoroughly after cleaning them, and place them in a bowl.
Season the sardines with lemon juice and a bit of salt, then set aside for 15 minutes.
2. Preparing the Tomato Sauce:
In a large skillet, heat the olive oil over medium heat.
Add the chopped onion and sauté until soft.
Add the garlic and stir for about a minute.
Add the grated tomatoes, followed by the coriander, parsley, and spices (cumin, paprika, turmeric, salt, and black pepper).
Let the mixture simmer on low heat for 10 minutes until the sauce thickens.
3. Assembling the Tagine:
In a Moroccan tagine or a baking dish, spread a layer of the tomato sauce at the bottom.
Arrange the sardines on top of the sauce in a circular or neat pattern.
Pour the remaining tomato sauce over the sardines and garnish with chili pepper if you prefer a spicy flavor.
4. Cooking:
Cover the tagine and cook on low heat for 30-40 minutes, or until the sardines are fully cooked and the sauce becomes thick.
If using an oven, preheat it to 180°C (350°F) and bake the tagine for 25-30 minutes.
Serving:
Serve the tagine hot with Moroccan bread or plain white rice.
You can add lemon slices on top for a refreshing touch.
