Preparation of Lamb with Golden and Delicious Broth
Ingredients:
1 kg lamb (preferably bone-in cuts, like lamb shank or shoulder)
3 tablespoons olive oil or ghee
2 large onions, finely chopped
4 garlic cloves, minced
1 tablespoon grated ginger
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon black pepper
1 teaspoon ground cinnamon
1 cinnamon stick
3-4 cloves
3 cardamom pods
4 cups lamb broth or water
Salt, to taste
A pinch of saffron (optional for extra color and flavor)
Juice of half a lemon
2 tablespoons chopped fresh cilantro, for garnish
Instructions:
1. Prepare the Lamb: Heat the olive oil or ghee in a large pot over medium heat.
Add the lamb pieces and brown them on all sides until golden, about 5-7 minutes.
2. Add Onion and Garlic: After browning the lamb, add the chopped onions and sauté until soft and translucent, about 3-5 minutes.
Then, add the garlic and continue to sauté for another minute until fragrant.
3. Add the Spices: Add the ginger, turmeric, cumin, black pepper, and ground cinnamon to the pot, stirring for a few minutes until well combined with the lamb and releasing their aromas.
4. Prepare the Golden Broth: Pour in the lamb broth (or water) until the lamb is fully submerged.
Add the cinnamon stick, cardamom pods, and cloves, along with saffron if using.
Allow the mixture to boil over medium heat for 5 minutes.
5. Slow Cooking: Reduce the heat to low, cover the pot, and let the lamb simmer for 1.5 to 2 hours, or until the meat is tender and easily pulled apart.
If the broth starts to reduce too much, add more water or broth as needed.
6. Final Seasoning: Once cooking is complete, add salt and lemon juice, and stir well.
Adjust the spices here if needed to balance the flavors.
7. Serve: Pour the lamb and golden broth into a serving dish and garnish with chopped fresh cilantro.
