Ingredients:
For the Dough:
500g white flour
200g whole wheat flour (optional for a unique texture)
1 tsp salt
1 tsp sugar
Warm water for kneading
Vegetable oil for shaping the dough
For the Filling:
2 medium-sized onions, finely chopped
250g minced meat (can be replaced with minced chicken or vegetables for a vegetarian option)
A small bunch of parsley, finely chopped
2 garlic cloves, minced
½ tsp ground ginger
½ tsp turmeric
1 tsp black pepper
½ tsp paprika
2 tbsp olive oil
Salt to taste
Preparation Method:
Preparing the Dough:
1. In a large bowl, mix the white flour and whole wheat flour with salt and sugar.
2. Gradually add warm water and knead well until the dough becomes smooth and elastic.
3. Divide the dough into small balls about the size of an egg, coat them with oil, cover, and let them rest for 30 minutes.
Preparing the Filling:
1. Heat olive oil in a pan over medium heat.
2. Add the onions and garlic, sauté until the onions soften.
3. Add the minced meat and all the spices, and mix well.
4. Once the meat is fully cooked, stir in the parsley. Let the mixture cool.
Shaping the Msemen:
1. Take one dough ball and lightly oil your work surface.
2. Gently flatten the ball until it becomes very thin.
3. Place a spoonful of filling in the center of the dough, then fold the edges to form a square.
4. Repeat with the remaining dough balls and filling.
Cooking:
1. Heat a flat skillet or griddle over medium heat.
2. Place the msemen on the skillet and cook until golden brown on both sides.
3. Serve hot with Moroccan tea or any preferred drink.
Tips:
You can make a large batch and freeze the uncooked msemen for later use.
For extra flavor, you can add grated cheese or chopped olives to the filling.
