              Ingredients:

For the meat and broth:

500 grams of lamb or beef (cut into medium pieces).

2 medium onions (finely chopped).

3 garlic cloves (mashed).

2 tablespoons of olive oil or vegetable oil.

1 teaspoon of ground ginger.

1 teaspoon of turmeric.

½ teaspoon of black pepper.

1 teaspoon of paprika.

1 cinnamon stick or ½ teaspoon of ground cinnamon.

Salt to taste.

1½ cups of hot water.

      For the vegetables:

2 carrots (peeled and cut lengthwise).

2 potatoes (cut into quarters).

A handful of cooked chickpeas (optional).

A small bunch of chopped parsley and cilantro.

           Preparation Steps:

     1. Preparing the meat:

In a deep pot over medium heat, heat the oil and add the chopped onion and mashed garlic.

Stir until the onion turns golden.

Add the meat pieces and stir well until their color changes and they start to brown.

Add the spices: ginger, turmeric, black pepper, paprika, and cinnamon, and stir to coat the meat evenly.

     2. Preparing the broth:

Add 1½ cups of hot water to the pot, cover it, and let it simmer over low heat for about 45 minutes or until the meat is half-cooked.

    3. Adding the vegetables:

Arrange the carrots and potatoes over the meat in the pot, and add the chickpeas if desired.

Cover the pot again and let everything cook on low heat for another 30 minutes or until the vegetables are tender and the flavors are well combined.

    4. Serving:

Pour the stew into a deep serving dish and arrange the vegetables around the meat.

Garnish the dish with chopped parsley and cilantro.

     Tips:

Serve the dish with traditional bread or plain white rice.

For added flavor, drizzle a bit of lemon juice over the dish before serving.

This stew is a perfect family meal with its rich flavors and variety of ingredients. Enjoy your meal!
