"Irish Golden Chicken with Mashed Potatoes"

 Chicken Stuffed with Chinese Noodles and Liver, with Mashed Potatoes and Golden Gravy – Irish-Style


                      -Ingredients:

          -For the stuffed chicken:

1 whole chicken (about 1.5 kg)

100g of Chinese noodles (soaked in warm water for 10 minutes)

200g of chicken liver (cut into small pieces)

2 cloves of minced garlic

1 large onion, chopped

1 teaspoon fresh grated ginger

1 teaspoon ground cumin

1 teaspoon black pepper

1 teaspoon salt

1 tablespoon vegetable oil

Juice of one lemon


              -For the mashed potatoes:

4 medium-sized potatoes (boiled and peeled)

50g butter

100ml hot milk

Salt and pepper to taste


                -For the golden gravy:

2 tablespoons flour

2 tablespoons butter

500ml chicken broth

1 teaspoon mustard

1 teaspoon honey (optional)

Pinch of black pepper


                  -Preparation Method:


       1. Preparing the stuffed chicken:

1. Heat the oil in a skillet over medium heat, then add the chopped onion and sauté until it softens.


2. Add the minced garlic and grated fresh ginger, and stir for a minute until fragrant.


3. Add the chicken liver to the mixture and cook until fully done.


4. Once the liver is cooked, add the soaked and drained Chinese noodles and stir the ingredients together.


5. Add cumin, black pepper, and salt to the mixture, and continue stirring for 3 minutes until the flavors combine.


6. Once the stuffing is ready, stuff the chicken with the noodle and liver mixture.


7. Sew the chicken using cooking thread or secure the opening with toothpicks to ensure the stuffing doesn't spill out.


8. Preheat the oven to 180°C


9. Place the chicken in a baking dish and drizzle lemon juice all over it.


10. Bake the chicken for about an hour and a half, or until the skin is golden and crispy, and the chicken is fully cooked inside.


         2. Preparing the mashed potatoes:

1. After boiling the potatoes, drain them and mash them well while still hot.


2. Add butter to the mashed potatoes and stir until the butter fully melts.


3. Gradually add the milk while mashing, until you achieve a smooth and creamy texture.


4. Season the mashed potatoes with salt and black pepper to taste.


             3. Preparing the golden gravy:

1. In a skillet over medium heat, melt the butter.


2. Gradually add the flour to the melted butter, stirring constantly until the mixture turns golden.


3. Gradually add the chicken broth, stirring continuously to avoid lumps, and cook until the gravy thickens.


4. Add mustard and honey (optional), and season with black pepper.


5. Let the gravy simmer for an additional minute while stirring until it becomes smooth and golden.


               -Serving:

Place the stuffed chicken with Chinese noodles and liver on a large serving plate.


Add the mashed potatoes next to the chicken.

Pour the golden gravy over and around the chicken to enhance the flavor.


You can serve this dish with a green salad or fresh bread for a complete meal.


Note: You can adjust the spices to taste and add any additional ingredients you prefer to the stuffing or gravy.
