Veal Kofta with Golden Gravy: A Delicious Recipe Loved by Both Adults and Children

                       - Ingredients:

          -For the Veal Kofta:

500 grams ground veal

1 medium onion, finely chopped

2 garlic cloves, minced

1/4 cup chopped parsley

1 egg

1/4 cup breadcrumbs

1 teaspoon cumin

1 teaspoon ground coriander

Salt and pepper to taste

1 teaspoon sweet paprika

1 tablespoon olive oil

              -For the Golden Gravy:

2 tablespoons butter

1 tablespoon vegetable oil

2 tablespoons flour

2 cups chicken or beef broth

1/2 cup milk

1/2 teaspoon turmeric

1/4 teaspoon saffron (optional but adds a great flavor)

Salt and pepper to taste

Juice of half a lemon

1 teaspoon ground ginger (optional)

           -Instructions:

  Preparing the Veal Kofta:

1. Mix the ingredients:

In a large bowl, combine the ground veal, chopped onion, minced garlic, parsley, egg, and breadcrumbs. Add the spices: cumin, coriander, paprika, salt, and pepper. Use your hands to mix the ingredients until well combined.

2. Shape the kofta:

Form the meat mixture into small balls, about the size of a walnut or larger if you prefer. You can wet your hands slightly to prevent the mixture from sticking.

3. Cook the kofta:

In a large skillet, heat a tablespoon of olive oil over medium heat. Sear the kofta balls on all sides until they are golden brown. Once browned, remove them from the skillet and set them aside.

          -Preparing the Golden Gravy:

1. Make the roux:

In the same skillet where you cooked the kofta, add the butter and vegetable oil. Once the butter melts, add the flour and stir constantly for a minute or two until the mixture turns golden and fragrant, forming the base for the gravy.

2. Add the liquids:

Slowly pour in the chicken or beef broth while stirring to prevent lumps from forming. Then, add the milk and continue stirring until the mixture starts to thicken.

3. Season the gravy:

Add the turmeric to give the gravy its lovely golden color. If using saffron, dissolve it in a teaspoon of warm water and add it to the gravy. Season with salt, pepper, and ground ginger if desired.

4. Finish the gravy:

Once the gravy has thickened and is smooth, add the lemon juice to give it a fresh, tangy flavor.

            -Serving:

Add the kofta to the gravy:

Once the gravy is ready, return the kofta balls to the skillet. Let them simmer in the gravy on low heat for 10-15 minutes, allowing the flavors to meld together and the kofta to cook through.

             -Serve:

Serve the veal kofta with golden gravy alongside a dish of white rice, couscous, or mashed potatoes. Garnish the plate with some chopped parsley for an extra touch of freshness and presentation.

           -Additional Tips:

Enhance the flavor:

You can add a pinch of cinnamon or ground cardamom to the kofta mixture for a richer, more exotic flavor.

           -For kids:

You can make this dish more kid-friendly by shaping the kofta into smaller balls and serving them with rice or bread.

            -Storing the kofta:

You can prepare a larger batch of kofta and freeze them before cooking, making them a convenient option for quick meals later on.

            -Conclusion:

This recipe is a wonderful option for a delicious and flavorful dinner that everyone will enjoy. The combination of tender veal kofta and rich golden gravy creates a perfect dish that can be served anytime, whether for family meals or when entertaining guests.
