Mexican-Style Beef Stew: A Flavorful Dish for Family Gatherings and Celebrations

     Ingredients:

1 kg veal, cut into medium pieces

2 tablespoons olive oil

4 garlic cloves, minced

2 chopped chili peppers (optional)

2 tablespoons tomato paste

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon smoked paprika

1 teaspoon dried thyme

4 cups beef broth or water

2 chopped tomatoes

1 bay leaf

1 cinnamon stick

Salt and pepper to taste

Juice of half a lemon




2 tablespoons chopped fresh cilantro

          For the Mexican Side Salad:


2 chopped tomatoes

1 chopped cucumber

1 chopped red onion

1/4 cup fresh cilantro, chopped

Juice of one lemon

2 tablespoons olive oil


Pinch of salt and pepper

          Preparation Steps:

1. Preparing the Meat:


Heat the oil in a large pot over medium heat. Brown the veal pieces on all sides until they are well browned. Remove the meat and set it aside.

In the same pot, add the onion and sauté until soft. Add the garlic and chili peppers, and continue to stir for a minute.

Add the tomato paste, cumin, coriander, paprika, thyme, and bay leaf, and stir the ingredients together until well combined.


2. Preparing the Broth:


Return the meat to the pot and add the chopped tomatoes and beef broth. Add the cinnamon stick and bring the mixture to a boil.

Reduce the heat and let the meat simmer on low heat for 1.5 to 2 hours until tender.

Once done, remove the cinnamon stick and bay leaf, then add the lemon juice and chopped cilantro.



3. Preparing the Side Salad:

In a bowl, mix the chopped tomatoes, cucumber, onion, and cilantro.

Add the lemon juice, olive oil, salt, and pepper, and stir well.


Serving:


Serve the Mexican Beef Stew with Veal alongside white rice or soft bread.
