How to Make Bread with Wild Yeast

                           Ingredients:

- 3 cups (375 grams) all-purpose flour

- 1 1/2 cups (375 ml) warm water

- 1/4 cup (60 ml) olive oil

- 1 tablespoon sugar

- 1 teaspoon salt

- 1/2 cup (100 grams) wild yeast (or sourdough starter)

           Instructions:

1. Prepare the Yeast:  If using a sourdough starter, ensure it is active. You can prepare it by mixing 1/4 cup flour with 1/4 cup warm water and 1 teaspoon sugar. Let it sit in a warm place for 24 hours until bubbles form.

2.  Make the Dough:  In a large bowl, mix the flour with salt and sugar. Create a well in the center and add the warm water, olive oil, and yeast. Knead the dough until smooth and elastic, then cover and let it rise in a warm place for about an hour or until doubled in size.

3. Shape the Bread: Once the dough has risen, punch it down to release air. Divide the dough into smaller pieces or shape it into one loaf as desired. Place the dough on a greased baking sheet or one lined with parchment paper.

4.  Bake: Preheat the oven to 220°C (430°F). Bake the bread for 25-30 minutes or until golden brown and it sounds hollow when tapped on the bottom.

5. Cool:  Allow the bread to cool on a wire rack before slicing.
