   Chocolate Berry Cheesecake Recipe


Chocolate Berry Cheesecake is a delicious dessert that combines the rich taste of chocolate with creamy cheese texture and a hint of fresh berries, adding a touch of light tartness that makes it perfectly balanced and irresistible.

 Here’s how to make this elegant dessert step-by-step.


           Ingredients:


             Crust Layer:


200 grams chocolate biscuits, crushed

3 tablespoons melted butter


     Cheesecake Layer:


500 grams cream cheese

3/4 cup sugar

1 teaspoon vanilla extract

3 eggs

1/2 cup heavy cream


     Berry Filling:


1 cup mixed berries (cherries, raspberries, blackberries)

1/4 cup sugar

1 tablespoon cornstarch

2 tablespoons water


Chocolate Sauce (Chocolate Ganache):


150 grams dark chocolate

1/2 cup heavy cream


   For Garnish:


Fresh berries (raspberries, blackberries, cherries)

Shredded chocolate



       Instructions:


   1. Prepare the Crust:


1. Crush the chocolate biscuits until fine, then add the melted butter and mix well until combined.


2. Press the mixture into the bottom of a cheesecake pan to create a firm base. Place the pan in the fridge to set.


    2. Prepare the Berry Filling:


1. In a small saucepan, add the berries and sugar, and stir well.


2. Mix the cornstarch with water and add it to the berries, then heat the mixture over medium heat, stirring continuously until it thickens. 

Set aside to cool.


    3. Prepare the Cheesecake Layer:


1. In a bowl, beat the cream cheese with sugar and vanilla until smooth and creamy.


2. Add the eggs, one at a time, mixing well after each addition.


3. Add the heavy cream and mix until fully combined.


4. Pour half of the cheesecake mixture over the crust, then spread the berry filling in the center, and pour the remaining cheesecake mixture on top.


     4. Bake the Cheesecake:


1. Preheat the oven to 160°C (320°F).


2. Place the cheesecake pan in the oven and bake for 45-60 minutes, or until the cheesecake is set.


3. After baking, let the cheesecake cool completely, then refrigerate it for at least 4 hours (overnight is best).


5. Prepare the Chocolate Sauce (Chocolate Ganache):


1. Heat the heavy cream until it begins to simmer, then pour it over the chopped chocolate.


2. Let the mixture sit for a minute, then stir until the chocolate melts and the mixture is smooth.


6. Garnish and Serve:


1. Remove the cheesecake from the fridge, pour the chocolate sauce on top, allowing it to drip down the sides.


2. Garnish the cheesecake with fresh berries and shredded chocolate for a beautiful and extra flavorful touch.
