 Recipe for Baghrir (Moroccan Semolina Pancakes)


           -Ingredients:

2 cups fine semolina

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon salt

1 tablespoon instant yeast

3 cups warm water

1 teaspoon baking powder (optional)

Oil for frying (as needed)



                    -Instructions:

      1. Prepare the Batter:

In a large bowl, mix the semolina, flour, sugar, salt, and instant yeast.

Gradually add the warm water while continuously stirring with an electric whisk or a wooden spoon until you achieve a smooth and light batter.

If you wish to add baking powder, you can do so at this stage.


       2. Let the Batter Rise:

Cover the bowl with a clean kitchen towel or plastic wrap and let the batter rise in a warm place for 30-45 minutes. You will notice that the batter has increased in volume and bubbles have formed.


       3. Prepare the Pan:

Heat a non-stick skillet over medium heat. You can use a small skillet for the right size of the baghrir.


       4. Cook the Baghrir:

When the skillet is hot, use a ladle to pour some of the batter into the skillet. There is no need to use oil at this stage.

Let the baghrir cook for 2-3 minutes until bubbles appear on the surface and the bottom turns golden. Do not flip the baghrir; it only needs to cook on one side.


        5. Serving:

Transfer the cooked baghrir to a plate and let it cool slightly. You can serve it with honey and butter or with other preferred ingredients.


          -Tips:

To achieve a beautiful golden color, make sure to heat the skillet well before adding the batter.

You can add some spices like cinnamon or saffron to the batter for extra flavor.

Enjoy your baghrir with honey or any of your favorite toppings!
