Chicken Liver with Onions and Green Olives in an Irresistible Sauce

           -Ingredients:

  • 500g chicken liver
  • 2 medium onions, thinly sliced
  • 100g green olives, pitted
  • 3 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon cumin
  • ½ teaspoon turmeric
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • ½ cup water or chicken broth
  • Juice of half a lemon
  • A sprinkle of chopped parsley for garnish

             -Preparation:



  1. Prepare the liver: Clean the chicken liver thoroughly and cut it into medium-sized pieces.

  2. Fry the onions: In a large skillet, heat the olive oil over medium heat and add the sliced onions. Stir the onions until they become golden and translucent.

  3. Add garlic and spices: Add the minced garlic to the skillet and stir for a minute until fragrant. Then, add cumin, turmeric, paprika, salt, and pepper. Stir the spices with the onions and garlic for a minute to combine the flavors.

  4. Cook the liver: Add the liver pieces to the skillet and stir for 5-7 minutes until they change color and are cooked on the outside.

  5. Add olives and water: Once the liver is partially cooked, add the green olives and water or chicken broth. Let the mixture simmer on low heat for 10-15 minutes until the liver is fully cooked and the flavors meld together.

  6. Add lemon and parsley: Before serving, add the lemon juice and stir. Garnish with a sprinkle of chopped parsley.

Serve the chicken liver with onions and green olives alongside traditional bread, or with rice or mashed potatoes.
