- Yummy Prawn Curry 🍛
-Ingredients:
500g prawns (cleaned and deveined)
1 large onion (finely chopped)
2 tomatoes (chopped)
1 tbsp ginger-garlic paste
2 green chilies (slit)
1/2 tsp turmeric powder
1 tsp red chili powder
1/2 tsp cumin powder
1 tsp garam masala
1 cup coconut milk (or water for a lighter version)
2 tbsp oil (vegetable or coconut oil)
1/2 tsp mustard seeds
1/2 tsp cumin seeds
Fresh coriander leaves (for garnish)
Salt to taste
Lemon juice (optional)
-Instructions:
1. Marinate the prawns:
Mix the prawns with turmeric, salt, and a little lemon juice. Set aside for 10-15 minutes.
2. Prepare the base:
Heat oil in a pan, add mustard seeds and cumin seeds. When they start to crackle, add the chopped onions and sauté until golden brown.
Add the ginger-garlic paste and green chilies, sauté for another 1-2 minutes until fragrant.
3. Cook the spices:
Add the chopped tomatoes and cook until soft and mushy.
Stir in turmeric, red chili powder, and cumin powder. Cook for 3-4 minutes until the oil separates from the masala.
4. Cook the prawns:
Add the marinated prawns and cook for 2-3 minutes on medium heat until they just start to turn pink.
5. Add coconut milk:
Pour in the coconut milk and let the curry simmer for about 5-7 minutes. You can add a little water if you want a thinner gravy.
Add garam masala and adjust the salt as needed.
6. Finish and serve:
Turn off the heat, garnish with fresh coriander leaves, and serve hot with rice or naan.
