beyond the screen

Here’s a detailed recipe for oven-baked fish with peppers and tomatoes, along with the spices and proportions:

                      -Ingredients:

2 medium-sized fish (preferred type: sea bass, dorado, or any white fish)

3 large tomatoes, sliced thinly

2 red or green bell peppers, sliced thinly

1 large onion, sliced

3 garlic cloves, finely minced

Juice of 2 large lemons (preferably fresh)

½ cup extra virgin olive oil

1 tsp ground coriander

1 tsp cumin

1 tsp paprika

½ tsp black pepper

Salt to taste

¼ cup fresh coriander, chopped

½ cup water

                    -Preparation Steps:

            1. Prepare the Fish:

Start by cleaning the fish thoroughly, removing the scales and guts. Rinse well under cold water, then set aside. Using a sharp knife, make small cuts on both sides of the fish to allow the marinade to penetrate the flesh.

           2. Prepare the Marinade:

In a deep bowl, mix the lemon juice with the olive oil, then add the minced garlic, ground coriander, cumin, paprika, black pepper, and salt. Stir the mixture well until the ingredients are fully combined.

            3. Marinate the Fish:

Place the fish in a large dish, then spread the marinade all over the fish, ensuring it gets into the cuts. Let the fish marinate for at least 30 minutes to absorb the flavors.

    4. Prepare the Vegetables:

In a large skillet, heat two tablespoons of olive oil over medium heat. Add the sliced onion and bell peppers and sauté for 5-7 minutes until the vegetables soften. Add the tomato slices and continue stirring for an additional 3 minutes.

         5. Prepare the Baking Dish:

Preheat the oven to 200°C (390°F). In a large baking dish, spread half of the sautéed vegetables at the bottom. Place the marinated fish on top of the vegetables, then spread the remaining vegetables over and around the fish. Pour the half-cup of water into the dish to keep the ingredients moist

            6. Baking:

Cover the dish with aluminum foil and place it in the oven. Bake the fish for 25-30 minutes, or until fully cooked and tender. After the baking time is up, remove the foil and return the dish to the oven for an additional 5-10 minutes to allow the fish to brown slightly.

              7. Serving:

Once out of the oven, sprinkle the freshly chopped coriander on top. You can serve the fish with white rice or pita bread, and it also pairs well with a fresh green salad or tomato salad.

                  -Tips:

If you prefer spicy food, you can add minced chili pepper to the marinade.

Be sure to keep an eye on the fish in the oven, as cooking time may vary depending on the type and size of the fish.

You can also place lemon slices over the fish while baking for an extra citrusy flavor.

                   -The Result:

You’ll have a delicious and flavorful Mediterranean dish. The fish will be tender and perfectly seasoned, while the vegetables add a fresh and colorful touch.
