 Baked Fries with Cheese, Eggs, and Cilantro


                      -Ingredients:

4 medium-sized potatoes: Peeled and sliced into thin strips or sticks (as preferred).

2 tablespoons of olive oil: For coating the potatoes before baking.

3 eggs: To make the egg and cheese mixture.

1 cup of shredded cheese (such as cheddar or mozzarella): For a rich and creamy flavor.

¼ cup of fresh cilantro, chopped: To add a distinctive and fresh flavor.

1 teaspoon of salt: To taste.

½ teaspoon of black pepper: For seasoning.

½ teaspoon of paprika: For color and mild flavor.

½ teaspoon of garlic powder: For extra flavor.


                     -Preparation:

       1. Preparing the Potatoes:

Preheat the oven to 200°C (392°F).

After peeling the potatoes, wash them thoroughly, then cut them into thin slices or stick, depending on your preference.

Place the potato slices in a large bowl, add olive oil, salt, black pepper, and paprika. Mix well to ensure the potatoes are evenly coated with the seasoning.

Arrange the potatoes on a baking tray lined with parchment paper or lightly greased with olive oil. Ensure the potatoes are spread out evenly for uniform roasting.



       2. Baking the Potatoes:


Place the tray in the oven and bake for 20-25 minutes, or until the potatoes are golden and crispy around the edges. You can flip them halfway through to ensure even browning.

Once done, remove the tray and set the potatoes aside.


3. Preparing the Egg and Cheese Mixture:

In a small bowl, whisk the eggs well and add a pinch of salt and black pepper to taste.

Add the shredded cheese to the whisked eggs and stir until the mixture is well combined. You can use a mix of cheeses like cheddar and mozzarella for a deeper flavor.

Stir in the chopped cilantro and mix again to ensure the flavors blend together.


       4. Assembling and Final Baking:

After baking the potatoes, pour the egg and cheese mixture evenly over the potatoes on the tray. Make sure the potatoes are well coated with the mixture for a balanced flavor.

Return the tray to the oven and bake for another 10-15 minutes, or until the eggs set and the cheese melts completely and turns golden on top.


         5. Serving:

Once the baking is complete, remove the tray from the oven and let the fries cool slightly before serving.

Garnish with fresh chopped cilantro for an extra burst of flavor.

Serve the dish hot as a main meal or a delicious side dish.


        - Additional Tips:

For extra crunch, you can add some breadcrumbs to the egg and cheese mixture before baking.

Feel free to experiment with different types of cheese, such as blue cheese or Parmesan, to give the dish a unique twist.

If you like some heat, sprinkle a bit of crushed red pepper or chili flakes on top before the final baking.
