                      -   Ingredients:

- 2 cups barley flour

- 1 cup whole wheat flour (optional, for improved texture)

- 1 tablespoon yeast

- 1 teaspoon sugar

- 1 teaspoon salt

- 1 ½ cups warm water

- 2 tablespoons olive oil or vegetable oil

                    -Preparation:

1. Prepare the Yeast:  In a small bowl, mix the warm water with the sugar and yeast. Let the mixture sit for 5-10 minutes until it becomes frothy on the surface, indicating that the yeast is activated.

2. Mix the Dry Ingredients:  In a large bowl, combine the barley flour, whole wheat flour (if using), and salt.

3. Add the Yeast:  Make a well in the center of the dry ingredients and add the yeast mixture and olive oil. Mix well until a dough forms.

4. Knead the Dough:  Turn the dough out onto a floured surface and knead for 5-7 minutes until smooth and elastic.

5. First Rising:  Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for 1-2 hours, or until it has doubled in size.

6. Shape the Bread:  Punch down the dough to release air, then shape it into a loaf or place it in a greased bread pan.

7. Bake:  Preheat the oven to 180°C (350°F). Bake the bread for 30-35 minutes or until it turns golden brown and sounds hollow when tapped on the bottom.

8. Cool:  Allow the bread to cool completely on a wire rack before slicing.غ
