 - Traditional Irish Dinner: Beef with Potatoes and Carrots


                           - Ingredients:

- 1.5 kg beef (such as brisket or chuck)

- 4 large potatoes, peeled and cut into chunks

- 4 carrots, sliced

- 1 large onion, chopped

- 3 cloves garlic, minced

- 2 cups beef broth

- 1 cup water

- 2 tablespoons vegetable oil

- 1 tablespoon tomato paste

- 1 teaspoon dried rosemary

- 1 teaspoon dried thyme

- 1 bay leaf

- Salt and black pepper to taste


                          - Instructions:

1.   Heat the oil. : Heat the oil in a large pot over medium heat.

   

2.   Brown the beef. : Add the beef chunks to the pot and brown them on all sides.


3.   Add onion and garlic. : Add the chopped onion and minced garlic to the beef and sauté until softened.


4.   Add tomato paste. : Stir in the tomato paste and mix well.


5.   Add broth and spices. : Pour in the beef broth and water. Add rosemary, thyme, and bay leaf.


6.   Simmer. : Bring to a boil, then reduce heat and let simmer for 2 hours, or until the beef is tender.


7.   Add potatoes and carrots. : Add the potatoes and carrots to the pot. Continue to simmer for 30-40 minutes, or until the vegetables are tender.


8.   Serve. : Check the seasoning and adjust salt and pepper as needed. Serve hot with whole wheat or traditional bread.


                  - Notes:

- You can add some green peas or green beans for extra color and flavor.

- This dish is ideal for a family dinner and can be stored in the refrigerator for several days.
